2 tablespoons oil
4 cups flour
1⁄2 cup white sugar
2 1⁄2teaspoons baking powder
1⁄2 teaspoon salt
1 egg
1⁄2 cup milk
2 teaspoons vanilla essence
1 cup light brown sugar
1 1⁄2 teaspoons ground cinnamon
1 cup butter, melted
Icing sugar, for dusting

Preheat oven to 170°C. Lightly brush a 20cm×20cm baking pan with oil, dust with flour, and tap to remove excess. Set aside.In a medium bowl, add together 1 1/2 cups flour, the white sugar, baking powder and salt; set aside.In a second bowl, whisk together the egg, milk, oil, and vanilla. Fold dry ingredients into egg mixture.Spread batter evenly into prepared pan, and set aside.In a medium bowl, combine remaining 2 1/2 cups flour, brown sugar, and cinnamon.Pour melted butter over flour mixture, and toss with your hands until large crumbs form.Top batter evenly with crumb topping.Bake for 35 to 40 minutes or until done. Dust with icing sugar when it comes out of the oven.
