We don't often have rice during the week but I made an exception this time to enjoy a pot of fragrant butter chicken akhni for dinner 😍 The idea came after spotting a gorgeous post on @food.n.art_pakistan by @deep.guha and ever since then, it played on my mind. I used a tried and trusted butter chicken recipe that I love and added extra ingedients and steps in the method that I felt would enhance the buttery flavour of the curry to create a delicious and well balanced dish. Just from the aroma that filled the house whilst it steamed in the oven, I could tell that it was going to be amazing and we thoroughly enjoyed it ❤
Butter Chicken Akhni

Ingredients 4 pieces chicken fillet cubed/1 whole chicken 1 tsp salt 3 tblsps aminas wonderspice butter chicken marinade 1/2 tsp dhana jeera 1/2 tsp Arad 1/2 tsp red chillis 1 tblsp ginger and garlic heaped 1/2 tsp garam masala (I omitted) 1/2 tsp aromat 1 tsp ground green chillies 1/4 tsp black pepper Egg yellow colouring 1 tsp lemon juice 2 curry spoons ghee
Method
In a pot, boil: 1 medium onion 3 small tomatoes Liquidise and set aside In another pot, heat ghee with 1 tsp jeeru and the above spices. Braise till aroma escapes. Add chicken and allow to braise in masala and cook. Add a bit of water if needed. When chicken is almost cooked, add in the tomato and onion mixture and allow to cook further. Add in 1 tblsp tandoori masala and 1 tblsp red garlic masala (both bought from Forsmays in JHB)) andx in well. Add in 1 tblsp tomato puree and 1 tsp sugar. Add salt to taste. Once curry is cooked through and oil separates from the tomato, add in half a tub of cream and mix through. Adjust spices if needed and cook till curry reduces to a thick sauce. Boil 3 eggs and fry 1 potato cut into cubes. Boil 2 cups of rice till 3/4 way done and drain. Layer a spoonful of rice at the bottom of your pot or casserole and dot with ghee. Layer curry over, place in potatoes and then layer rice and place in eggs. Steam in oven till done. Garnish with dhania and enjoy
