Recipe: Paratha Dough

Paratha Dough

Ingredients:

2 cups flour
2 teaspoon oil or ghee or butter
½ to 1 teaspoon salt or add as per taste
⅔ cup water or add as required

Dough preparation:

In a mixing bowl, add:
2 cups flour
2 tsp oil or ghee
1/2 to 1 tsp salt or add as per taste.
Use fingers to mix the oil into the flour to create breadcrumb like texture
Add water in parts. Initially, add 1/3 to 1/2 cup water and begin to knead to create a soft dough. Add more water as required. Cover the dough and keep aside for 30 minutes.

Method:

After 30 minutes, make equal, medium sized balls of the dough.

Sprinkle flour lightly onto your working surface and roll the ball into large thin roti.

Brush some oil all over and sprinkle some flour evenly over the top.

Begin to fold from the edges into pleats like a fan and then roll tightly into a circle.

Press the loose end at the center downwards.

Prepare all the balls according to this method and keep aside covered to rest for 12 to 15 minutes.

Take one pleated ball and dust some flour on both sides.

Roll into a roti size.

Fry in ghee till browned on both sides.

Optional: make filling of your choice, once rolled out, egg with egg wash and spread filling onto one paratha. Close using another paratha.
