Chops Chutney Recipe by Keenan Blake
2 kg lamb or mutton chops (or any amount that you want to make)
12 to 15 tomatoes, chopped (or chopped can tomatoes)
2 onions, sliced ( keep a handful for garnishing)
10 green chillies, sliced long ways
1 cup coriander, chopped
2 tablespoons turmeric powder
2 tablespoons garam masala (1 tablespoon extra)
3 to 4 tablespoons masala
Salt to taste
1 tablespoon sugar
2 tablespoons oil
Couple cups of water
In a deep pot add the chops, salt and that 1 tablespoon garam masala. Add about 4 cups of water. Boil until the chops are soft, if more water is needed add more. If you have mutton chops it will take about 1 hour 30 mins or lamb chops will 30 mins. I'm giving you a guide line, but different grades meat will take longer or shorter. Set aside, dont throw away the liquid that you boiled the chops. In another pot add the oil, chillies and onions. Cook for 6 mins. Add the tomatoes, turmeric, garam masala, masala, sugar and the liquid that we kept aside. Cook for 10 to 15 mins, until the tomatoes are broken down. Add the chops and coriander, and mix. Cook for a further 10 mins until the chutney is thicken. Garnish with that handful of onions that you kept aside.(I love adding sliced onions as a garnish for any chutney that I make it gives it a crunch)
