Portuguese Roast Chicken Recipe by Keenan Blake

12 chicken pieces
5 tablespoons paprika
Salt and pepper to taste
2 tablespoons dried oregano
1 tablespoon chilli flakes
6 tablespoons olive oil
1/2 cup tomato sauce
1 tablespoon cayenne pepper

In a bowl add the chicken and the rest of the ingredients besides the tomato sauce. Mix everything together until the chicken is will coated. Add the chicken to a roasting pan and bake for 35 mins or until the chicken is cooked on 180°c. Remove the chicken from the oven, but still keep the oven on. In a saucepan add all the liquid that is in the roasting pan, plus the tomato sauce. Bring that to the boil and simmer until its reduced by half. Baste the chicken that are still in the roasting pan with the sauce on both sides. Return back to the oven for 5 mins.
