Milk Tart Recipe by Keenan Blake
(makes two tarts)
250g butter
2 1/2 cups flour
1/2 castor sugar
2 teaspoons baking powder
1 egg
Pinch of salt
In a bowl add the flour, salt , baking powder and castor sugar. Rub the butter into the flour mixture until it comes together. Add the egg and combine until a soft dough is formed. Press by hand into two flan pans or two foil pie pans. Make sure that its not to thick when you press it into the pan, because it will rise(so if you make your base thick, then you will have less filling inside). Prick with a fork and
bake for 15 mins or until light brown at 180°C. Allow to cool.
Filling (If you using flan pans like I'm using, then make 1 1/2 amounts of filling)
4 cups milk
1 teaspoon vanilla
2 1/2 tablespoon corn flour
2 1/2 tablespoon flour
1 cup sugar
3 eggs
1 tablespoon butter
Pinch of salt
In a saucepan add the milk, vanilla essence and butter. Heat on medium to low. In another bowl add the eggs, castor sugar, cornflour and flour. Mix everything together until it is lump free. From the pot take 1 cup of milk and slowly add it to the egg mixture making sure that you are whisking while you add the milk. Keep adding cups of milk until the egg mixture is the same temperature as the milk in the pot. Add the egg mixture to the milk thats left in the pot. Heat for 10 mins until the mixture begins to thicken. Once the mixture is thicken add it to the two bases.Sprinkle with cinnamon powder and refrigerate until set.
