Recipe: Marshmallow Brownie Cups by Hungry for Halaal
When in need of a versatile party treat nothing is as popular as Chocolate brownies. I’ve found ways to reinvent them with different fillings and toppings but this latest craze, the brownie cups are just the bomb! To begin with the brownie on it’s own is just a treat. Now fill it with Marshmallow fluff and you’re sure to win over every heart at the party.
These are quite easy to make and don’t take that much time either. And you can get quite experimental filling it with chocolate mouse, custard or my personal favourite, ice cream. I’ve used one of my No Fail Chocolate Bake recipes, and I will also share it below for the brownie cups. The Marshmallow Fluff took a little refining but is quite easy to make too.

Chocolate Brownie Cups
So when it comes to baking, chocolate has always been able to get me out of hot water. I always wake up at the eleventh hour when I need to take something to an occasion. And I know many of you just do not have the time to spend an afternoon in the kitchen making something that will be devoured in half an hour. So chocolate has become my go-to ingredient for these 2 fail safe recipes I have been making for years. They are both tray bakes so deliver a good quantity. They never fail to disappoint and you can dress them up in all kinds of ways.

Be an Anonymous Angel, donate HERE Method Preheat your oven to 180°C. Grease a mini muffin or mini cupcake pan well. Melt the butter and the chocolate and mix until smooth. I use the microwave in bursts of 30 seconds on medium power. In a separate bowl, mix together the cocoa powder, flour, baking powder and sugar, then add this to the chocolate and nut mixture. Stir together well. Beat the eggs and mix in until you have a silky consistency. Pour your brownie mix into the cups till about 3/4 full and bake on the middle shelf for about 15 to 20 minutes. You don’t want them to be dry like a cake. The brownies should be slightly springy on the outside but still gooey in the middle. While the cake is still warm use a small sauce container or bottle cap and press down the centre of the brownie cup to create cup shapes. remove from tray and cool on wire racks. |

Marshmallow Fluff Ingredients
Be an Anonymous Angel, donate HERE Method Use 4 to 5 marshamallows at a time. Place in a small bowl with 1/4 tsp sugar and 2 tsp milk at a time. Microwave 20 to 30 seconds at a time till the marshmallows puff up. Remove from microwave and stir together well. The mixture may be a bit runny but fill the brownie cups with the mixture while it’s still runny as it sets quite quickly. Then repeat this process till all the cups are filled. |
