Recipe: NOLA based Easy Chicken Curry
Re-Creating a Stir!
26th September is our wedding anniversary, and this year marks our 9th year, All praise to The Almighty!
So in honour of spending 9 years together, I have decided to "re-create" an inside joke of ours, more of a laugh on me, but a tasty memory nonetheless.
In our initial stages of marriage, I experimented with cooking curries by using sauces instead of cutting up tomatoes and created a recipe that I continued using for quite awhile... A Mayonnaise-based Chicken Curry!
It should be noted that I like to make things that don't take up too much time, and that I do not have exact measurements for recipes, as I tend to "see how it goes".
Ingredients: Chicken Breast Fillets cut up into cubes NOLA Mayonnaise Potatoes Spices (gharam masala, chilli powder, dhania jeera powder turmeric) Ginger garlic paste
Method: Cut the washed chicken fillets into cubes and put them into a heated pot that has the base covered with some oil. Throw in some spices (I used gharam masala, chilli powder, turmeric and dhania jeera powder) as well as a teaspoon or 2 of ginger garlic paste (based on how many chicken fillets you use) Add in some washed and cubed potatoes. We recently learnt that non-peeled potatoes are much more healthier than peeled ones, so we hardly ever peel the potatoes. Stir all the ingredients in the pot, close the lid and let it cook on a low heat for several minutes - If you need to, add a tad bit, just a tad bit of water to make sure it doesn't burn or dry out. Once the potatoes are soft and the chicken looks cooked as well as the ingredients in the pot look like they need some gravy in their life 😉, add a generous serving of NOLA Mayonnaise into the pot and stir the ingredients well. Leave the curry in the pot a little bit longer with the pot lid closed on the lowest heat. |
And that's it!
The quickest, easiest Chicken Curry made with the least amount of ingredients and time and the gravy is a delicious NOLA Mayonnaise!
Spices can be added or removed to suit your tastebuds.
We served it on a warmed tortilla.
