Recipe: NOLA Potato and Egg Fold-Over
My favourite food is potatoes, I can eat potatoes any time of the day in any form, and if you ever follow any of my recipes you will see this is true.
So I think I missed breakfast this morning, which is usually a nice full breakfast which includes eggs (and some form of potatoes), and now I have this craving for eggs.
Breakfast for dinner is not a bad idea, but what can I make.
We recently received a bottle of teriyaki spice which I am loving in any dish so that is definitely going to be included, BBQ spice can be used as a substitute. Potatoes is a must, and of course the eggs, and let's #CreateAStir with some NOLA Mayonnaise.
Ingredients:
3 x Eggs (2 can be used depending on the size)
1 x Potato
1 x Teaspoon of Teriyaki Spice / BBQ Spice
1 x Tablespoon of NOLA Original Mayonnaise
1 x Slice of Cheese
1 x Teaspoon of oil
A sprinkle of Mixed Herbs
Method:
Grate the slice of cheese and keep it in a little ramekin.
Cut up the potato into little pieces or cubes. Mix the teriyaki spice/BBQ spice with the cut up potato pieces in a bowl and add half the teaspoon of oil in the mixture.
I find it easier to cook the potatoes in the microwave for just 5 minutes, but they can be fried or put in the oven.
While the potatoes are cooking.
Crack the 3 eggs in a separate bowl and whisk them together.
Put the other half a teaspoon of oil in a frying pan and pour the whisked eggs in the pan.
Fry the egg on a medium heat until the bottom of the egg starts getting a bit brown and a little hard.
By now the potatoes should be cooked and ready to be mixed with the tablespoon of NOLA Mayonnaise.
Mix well and add the new potato mixture to one side of the egg in the frying pan.
Fold over the other side of the egg and add the grated cheese on top.
Gently take out the egg fold-over with a spatula and place on your plate - like I did on this Le Creuset Cherry Pasta Bowl.
Thyme, Italian or Mixed Herbs can be sprinkled on top as a garnish.
