Stroganoff Durban Style
• 1kg porterhouse steak ( or any piece you prefer) • 1 Tbs oil • 3 large onions ( sliced finely) • 1 head of garlic ( chopped) • 1 heaped tsp paprika • 2 level tsp salt • 2 tsp black pepper • tray of mushrooms ( sliced ) • 2 cups fresh cream - heat the oil in a wide bottom pot - add onions and garlic - cook gently for about 10 mins - do not brown this mixture - when onions are translucent & beginning to soften increase the heat to high and put the steak into the pot - add seasonings and and give it a mix to coat the pieces - let it sizzle for a minute and turn down the temperature to medium - put a lid on the pot and leave to simmer gently for 30mins ( meat should be tender ) - when the time is up, drop in the sliced mushrooms, stirring through again - pour over the cream - increase the heat, lid off and let it bubble for about 2 mins - this will reduce the cream and all flavours will marry together. - dinner is now done, top with chopped parsley - serve with buttery mash potato and a salad of slice cucumber & tomato simply seasoned with S&P.
