Banana puri recipe by Keenan Blake
500ml Cake Flour
2ml Baking Powder
250ml Ice Water
3ml Lemon Juice
125ml Melted Butter (2 Tablespoon for the dough)
125ml cornflour
Coloured coconut
SYRUP
250ml Sugar
1/2 teaspoon Elachi Powder
125ml Water
Boil the Sugar and Water together for 5 minutes. Allow syrup to cool.( make the syrup first)
METHOD Sift dry ingredients.Rub 2 tablespooms butter into dry ingredients. Add ice water with lemon juice in it, to form stiff dough. Divide dough in 8 portion. roll each portion into normal size rotis. Brush the first one with melted butter and then sprinkle with corn flour, continue this for 6 more times, by stacking them on top of each other and placing the last roti on top( the top of the stack shouldn't have butter or cornflour on top). Roll into large circle. Cut into 2cm size strips. Fold each strip 5 times and press down with rolling pin till it is flat (Not very flat).Heat oil (not too hot, the banana puri shouldn't brown) Place banana puri into oil. Use two forks and control the banana puri as it frys, When they are frying open the layers with the fork. Do not let it get brown. Remove from heat and place on a cooling rack to allow all oil to be removed.When cooled, dip into syrup. Sprinkle with coloured coconut. ( They should be eaten in the first and second day)
