Today I'm doing a throwback to this platter of roti nachos I prepared for a casual get together with the ladies. For those who aren't quite fans of corn chips, you could very well substitute them for roti chips instead 😄 Top them with salsa, feta cheese, roasted potato cubes, olives, coriander, chives and sour cream dressing! They're really tasty! If you decide to try the recipe, let me know your thoughts!

Roti Nachos

Make rotis as usual Cut into triangular chip shapes Layer onto a tray and put into the oven on 100C till crispy or into the microwave for 30 second to 1 minute to crisp up. Watch that it doesn't burn. Keep aside to cool
Salsa: Slice onions and saute in a pan with oil, salt garlic and black pepper until soft. Add grated fresh tomato, tomato puree, sugar, a sprinkling of origanum or basil and allow to cook through till it thickens into a salsa consistency.
Potato cubes: Cut potatoes into small cubes and boil till soft but not mushy. Toss into a non stick pan with a little bit of oil and season with potato spice and fry till crispy on the outside. Leave aside
Dressing: Mix together mayo and yoghurt/sour cream and season with salt, pepper and sugar Layer the chips onto a platter. Top with salsa. Grate over any cheese of your choice and sprinkle with the potatoes. Put into the oven until cheese melts. Sprinkle with chopped chives, green chillies, coriander, olives and baby tomatoes. Drizzle dressing over the top and season with salt and pepper at the end.
